Ingredients
One package of Medifast Scrambled Eggs
One Tablespoon of diced green pepper
One teaspoon of diced red pepper
One teaspoon of diced red onion
One mushroom, diced
Directions
Using four ounces of water mix with the scrambled egg powder.
Saute veggies in one teaspoon olive oil. When soft, add egg mixture and stir constantly with a spatula until fluffy. Season with salt and pepper, if desired.
Keep zip bags of diced veggies in freezer bad and use when needed. Top with a spoonful of salsa if desired.
