Ingredients

1 large green pepper, topped off and hollowed
5 oz lean ground beef
1/4 cup zucchini, cubed
1/4 cup mushrooms, cubed
1/4 cup tomatoes
1 Tablespoon onion, chopped

Directions

Cut the top off your pepper and hollow it out. Put it in a deep stove top pan and fill the pan with water to cover the top of your pepper. Blanche the pepper and then remove from pot. In a separate pan, sprayed with low-fat, non-stick spray, saute ground beef and veggies.
