Ingredients
2 6-oz boneless/skinless chicken breasts
juice from 1/2 lemon
2 Tablespoons capers
1/2 teaspoon black pepper
dash of salt
Directions
Preheat pan. Season chicken with salt and pepper. spray pan with nonstick cooking spray. Place chicken top-side down and cook for 3 minutes. Turn over and cook for 2 minutes more.
Add lemon juice and capers. Cook for 2 to 3 minutes or until cooked through. Place chicken on plate and pour pan drippings over each portion.
