Ingredients
5 oz salmon
3/4 cup zucchini,diced
3/4 cup cauliflower, cut into small florets
1 teaspoon scallions, diced
Directions
Heat the oven to 375 degrees. Place a 5 oz. portion salmon fillet on a sheet of tin foil. Sprinkle with diced, chopped scallions.
Roll up the ends and sides of the foil to form a closed pocket. Put the chopped veggies a baking sheet, and then put both the salmon and the veggies in the oven for 20 minutes.
