Ingredients
1/2 sweet red bell pepper, cut into strips
1/4 sweet green bell pepper, cut into strips
1/4 sweet yellow bell pepper, cut into strips
2 Tbsp chopped fresh parsley
5oz fresh salmon fillet
1/4 tsp. paprika
Salt and Pepper to taste
Directions
In a microwave-safe dish, place the peppers and parsley. Cover and cook on high 3 minutes.
Stir vegetables, place salmon fillets on top and sprinkle with paprika, salt and pepper. Cover and cook on high 4 1/2 minutes; let rest 5 minutes before serving.
